In addition to the harvest date, we are extremely fanatical when it comes to the “chemistry ” of our olive oils. The chemistry of a particular oil can tell you many things. By testing an oil, we can learn the polyphenol count (antioxidant value), the measurement which dictates flavor intensity, to whether it’s suitable for high heat cooking, based on its unique free fatty acid measurement and fruit condition. We also measure oleic acid in our oils, the monounsaturated fat in Olive Oil that makes it so healthy. By paying attention to the info in the tasting panels we provide, you will start to understand which oils are healthiest and which ones you will enjoy the most. While some people are looking for the most robust flavor they can get, others prefer milder oils. It is not hard to imagine that different recipes can shine brighter with an oil that complements the flavor goals of the dish.

We invite you to come in and taste the difference! If you have any doubts, bring your store-bought oil from home to compare. Some people think you need years of training to pick out subtleties, but that's not the case. Many of our new customers have been surprised at how easily they can learn to taste the difference. At one recent class, 100% of the people were able to pick out our fresh ultra premium extra virgin olive oil from store-bought oil after a short introductory tasting session. They looked around totally surprised, like we had just done a magic trick, but we have seen similar results over and over. Since we hate waste, we also know lots of non-cooking uses for old store-bought oil once people learn the difference.
