The fermented grapes were pressed a bit early, and later moved to small French oak barrels for a year and a half. This wine displays blueberry, black cherry and currant flavors with nuances of licorice, violets and cigar box all wrapped together with a dash of vanilla and mocha. Medium to full-bodied, well-balanced, with soft tannins, this wine shows tremendous dimension, with a seamless finish that lingers throughout the palate. Pair with dishes on the savory side, such as lamb and roasted meats. This wine is designed to drink within four years of its vintage date, however it will be at its best starting around 2020.

With a greater day-to-night temperature swing than any other appellation in California, distinct microclimates, diverse soils and long growing seasons, Paso Robles is a unique wine region with optimal growing conditions for producing premium and ultra-premium wines, with focus on Cabernet Sauvignon, Zinfandel and Syrah. These grapes are sourced from two different vineyards situated in close proximity to each other. The combination of grapes from the young vines of Sunny Slope, and the old vines of San Juan combine to create the best balance and increase the flavor complexity of this wine. A portion of the grapes went through the thermovinification process and were later fermented alongside fresh crushed grapes. The temperature of the fermentation was moderate, never hot, to preserve the fruit and to extract only a moderate amount of tannins from the seeds.
