Green Bean Salad

Ingredients:

1 lb. young green beans
2 tbsp. Red Wine Vinegar
3 tbsp.  Extra Virgin Olive Oil

Salt and freshly ground black pepper
1 garlic clove, peeled and minced
1/2 cup shredded fresh cilantro leaves

Directions:

Cook beans until tender, about 10 min.
Drain, rinse under cold water, and set aside to cool.
Whisk red wine vinegar and extra virgin olive oil. Season with salt and pepper. Add garlic and cilantro. Mix, then add beans. Set aside for 2 hours to allow flavors to develop.

Espresso Balsamic Parfait

Ingredients:

1 large banana, sliced, divided
3 Tbs Simply Divine Espresso Balsamic Vinegar
1/4 cup honey, divided
1/2 cup plain yogurt, divided
1/2 cup Granola

Directions:

Whisk together Espresso Balsamic Vinegar and yogurt.
Reserve several slices of banana for garnish. Layer 1 Tablespoon honey, 1/4 of the sliced bananas, 2 Tablespoons the Espresso yogurt mixture, 2 Tablespoons granola, 1/4 of the sliced banana, 2 Tablespoons yogurt, 2 Tablespoons granola in a parfait glass. Repeat for second parfait. Garnish with reserved banana and honey. Serve immediately.
